Hope's Kimchi Breakfast Sandwich

Hope's Version: Kimchi Sammy
Ingredients
  • The Piper
  • 1 of your favorite rolls
  • 1 avocado, mashed
  • Cheddar cheese (Cabot, ideally)
  • 1 egg
  • Kimchi
  • Your favorite seasonings
  • Oil of your choice (I use avocado oil)
  • Optional: sausage
Instructions
  1. Toast your roll until golden and crispy.
  2. Heat a small pan over medium and add a bit of oil.
  3. Mash the avocado and season it to your liking.
  4. Cook your egg however you love it — fried, scrambled, or over easy.
  5. Build your sandwich: roll, avocado, egg, cheddar, kimchi, and sausage if using.
  6. Enjoy!
