Hope's Version: Kimchi Sammy
Ingredients
- The Piper
- 1 of your favorite rolls
- 1 avocado, mashed
- Cheddar cheese (Cabot, ideally)
- 1 egg
- Kimchi
- Your favorite seasonings
- Oil of your choice (I use avocado oil)
- Optional: sausage
Instructions
- Toast your roll until golden and crispy.
- Heat a small pan over medium and add a bit of oil.
- Mash the avocado and season it to your liking.
- Cook your egg however you love it — fried, scrambled, or over easy.
- Build your sandwich: roll, avocado, egg, cheddar, kimchi, and sausage if using.
- Enjoy!
